CHICKEN AND ALMONDS IN SWEET ORANGE SAUCE


Serves 2

200 g = 1 cup Chicken Breast Fillets cut in strips
1 clove garlic chopped finely
½ Leek sliced
½ green pepper cut into strips
Third cup Stock
Third cup Orange Juice
1 T Soy Sauce +  ¼ t coriander + ¼ t garam masala
1 T honey
½ cup orange flesh chopped
1 T cornflour dissolved in 1 T cold water

toasted almonds for garnish


 

1.       STIR FRY CHICKEN 5 OR 6 MINUTES
2.    + GREEN PEPPER &LEEK,  STIR FRY 5 MINS
3.    + STOCK, ORANGE JUICE, SOY SAUCE & HERBS. BRING TO BOIL
4.    + HONEY.  SIMMER 15 MINS
5.    + CHOPPED ORANGE
6.    + CORNFLOUR MIX.  STIR 'TIL THICKENS

 7.          GARNISH WITH TOASTED ALMONDS

8.       SERVE WITH LONG GRAIN WHITE RICE (two thirds white rice & one third   Jasmine rice)
