I made these every day for our restaurant in Allora, Queensland, Australia, about 20 years ago. Utterly delicious.


BAKED CHEESECAKE  (My Own recipe)

Serves 8 very generous portions
Preheat oven to 175° celsius (350 farenheit)

Ingredients

For BASE
Crush and mix :-
3 wheatmeal biscuits
1 T quick cooking oats
1 T sugar
1 dessertspoon butter melted
Press mixture into base of a spring form tin
Then cut strip of either baking paper or greaseproof paper to line sides of tin


For CHEESECAKE MIX
250g cream cheese
500g cottage cheese (OR - 250g cottage cheese & 250g sour cream)
¾ cup castor sugar
2 eggs
1½ T cornflour
1 t lemon juice
½ t vanilla essence
60g butter melted


Procedure

BLEND ALL CHEESECAKE MIX INGREDIENTS IN BLENDER & POUR ON TO BISCUIT CRUMB BASE ALREADY IN SPRINGFORM TIN.

BAKE 75 MINS AT 190° (375 farenheit)
& FURTHER 15 MINS AT 175° (350 farenheit)

After turning oven off - leave in closed oven for as long as possible, overnight is O.K.  This will save the top from cracking, as shown in Photo 1.
Put in 'fridge to cool and take out of springform tin.
Decorate with fruit of your choice with a sweet cornflour glaze and some piped cream, as shown in Photo 2, displayed on an Australian glass comport made by Crown Crystal circa 1930's. This is one of my large collection of Australian glass comports.
