I wrote this about 20 years ago when I started experimenting with microwave cooking and found I could make far superior Christmas puds to the one's my Mum used to slave over year after year.
My microwave Christmas puds were made in minutes and my Mum's took hours,even days !


CHRISTMAS PUDDING (Microwave)


225g mixed fruit
5 glace cherries (chopped)
1 small apple - grated
40g nuts (chopped)
grated rind of 1 lemon
grated rind and juice of 1 small orange

50g plain flour
¼  t salt
¼  t mixed spice
¼  t cinnamon
¼  t nutmeg

50g brown sugar
25g fresh breadcrumbs
50g shredded suet
3 T stout or any strong beer
3 T Sweet Sherry
1 T molasses
2 eggs (beaten)
milk as necessary
2 t parisian essence (gravy browning)


 A.    IN LARGE BOWL MIX ALL FRUIT, PEEL, NUTS, RIND & JUICE.

B.  SIFT FLOUR, SALT & SPICES TOGETHER. MIX WELL.

STIR IN REST AND ADD ENOUGH MILK TO FORM A MIX WHICH WILL EASILY DROP FROM SPOON.

COVER & LEAVE IN A COOL PLACE OVERNIGHT.

COVER LOOSLEY WITH PLASTIC.  MICROWAVE 20 MINS ON MEDIUM. 
STAND 4-6 HOURS.

To serve, re-microwave 10 mins on MEDIUM.  Stand 10 minutes.
