Be VERY sure to make the 'dough' very firm, almost to the verge of being dry and crumbly. Microwave first lot for 1 minute only as a trial. Over cooking will ruin them. Always use clean greaseproof paper.
Microwave MeringuesMakes 24
1 egg white About 300gms (10ozs) Pure Icing Sugar (NOT Icing Mixture) 1 Tablespoon Cocoa (if chocolate meringues preferred)
1. IN MEDIUM BASIN BREAK UP EGG WHITE WITH FORK (Do not whisk)
2. ADD ICING SUGAR SIFTED (with cocoa if wanted) AND MAKE A FIRM PLIABLE DOUGH.
3. MAKE INTO BALLS ABOUT WALNUT SIZE AND PLACE SIX ONLY AS FAR APART AS POSSIBLE ON GREASEPROOF PAPER ON MICROWAVE TURNTABLE.
4. MICROWAVE on HIGH 1-1½ minutes UNTIL RISEN & DRY
5. REMOVE TO WIRE RACK TO COOL & HARDEN
6. REPEAT WITH ANOTHER BATCH - TURN PAPER OVER OR USE NEW PIECE
