This is a favourite of my wife, especially when she needs to use up some ripe bananas !  She says they beat all the high fat variety in the shops, and always has some in the freezer.


GREEK YOGHURT & BANANA MUFFINS (LOW FAT)

Makes 12 Muffins

125g Greek Style Yoghurt
½ C. honey
2 whole eggs whisked
1 apple grated (including skin)
3 bananas (broken into chunks)
Dash cinnamon
Grated zest of 1 orange 
1 C.  raisins or sultanas            
1½ C's  S.R. flour (1 C. Wholemeal S.R. flour & ½ C. Plain  S.R. flour) 

Greek Yoghurt and Banana Muffins


1)      WHISK GREEK YOGHURT & HONEY IN MIXMASTER
2)  +  EGGS + APPLE
3)  + BANANA CHUNKS, CINNAMON, GRATED ORANGE        
             ZEST, RAISINS OR SULTANAS
4)  + S.R. FLOUR
5)     COMBINE
6)     DIVIDE BETWEEN MUFFIN TINS

BAKE ABOUT 15 MINS IN FAIRLY HOT OVEN
LET MUFFINS COOL BEFORE REMOVING FROM PAN
