GREEN PEA, POTATO and BACON SOUP
Serves 4¾ cup bacon pieces
1 onion chopped
1 potato diced
2 C cx stock (made from chicken frames)
2 C frozen peas
375mls can Evaporated Milk
S & P
1. HEAT LARGE PAN WITH A LITTLE OLIVE OIL
+ BACON & ONION - COOK 2 MINS
+ POTATO - COOK 1 MIN
2. + 2 C's Cx STOCK & SIMMER 10 MINS
+ PEAS & SIMMER 5 MINS
3. BLEND UNTIL SMOOTH
4. RETURN TO PAN - + EVAPORATED MILK
+ S & P - BRING TO BOIL
5. SERVE WITH CROUTONS & PARSLEY
